If you were to ask what my favorite food is without hesitation I would say lasagna. In the summer, with the mighty warm temperatures, baking a lasagna for hours and heating up the kitchen is one of the last things I want to do. For your next family gathering you can whip this tasty strawberry lasagna. Chill out with a great dessert without having to break a sweat! I quart of strawberries, cleaned and diced
1 package of cinnamon graham crackers
1 tub cool whip
1 8 oz package room temperature cream cheese
1 Tablespoon vanilla
fresh mint to garnish
Take cream cheese and vanilla and whip until creamy. Spread the cream over a graham cracker and place in the bottom of a 9 by 13 pan. Do this until you make the first layer. Add fresh strawberries and a layer of cool whip. Begin the process over with the graham cracker and cream cheese spread. When your pan is filled to the top, layer with cool whip again, fresh strawberries and mint.
Place in refrigerator until ready to serve. Will feed at least one very hungry person or a dozen.
