Apple Crisp with Honey

Ingredients

  • 4 cups peeled, cored and sliced apples
  • 2 teaspoons lemon juice
  • 2 tablespoons water
  • 1/2 cup honey
  • 1 teaspoon ground cinnamon
  • 3/4 cup brown sugar
  • 3/4 cup all-purpose flour
  • 3/4 cup rolled oats
  • 4 tablespoons butter

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
  2. Evenly spread the apple slices in the prepared dish. In a small bowl, mix the lemon juice and water, and pour over the apples. Drizzle apples with honey, and sprinkle with cinnamon.
  3. In a bowl, mix the brown sugar, flour, oats, and butter until the mixture resembles coarse crumbs. Sprinkle over the apples.
  4. Bake 25 minutes in the preheated oven, until apples are tender and topping is lightly browned.

Baked Sweet Potato Chips

  • 2 thinly sliced sweet potatoes
  • 3 Tbsp. Parmesan Grated Cheese

Heat oven to 425 degrees

Place potatoes in a large bowl and spray with non-stick cooking spray. Add 1 1/2 Tbsp. grated cheese and toss to coat.

Spread potatoes into a single layer on a baking sheet sprayed with non-stick cooking spray (spray with additional spray after potatoes are laid out).

Bake for 9 minutes and turn potatoes for an additional 9 minutes. Spray potatoes with additional cooking spray and return to the oven. Turn the oven off and let the potatoes stand inside the closed oven for 8 – 10 minutes or until crisp and golden brown. Remove from oven and toss with remaining grated cheese topping.

Taco Soup

  • 1 pound of Ground Beef or Ground Turkey
  • 1 Finely Chopped Medium Onion
  • 2 Cans of Pork & Beans (do not drain)
  • 2 Cans of Mexican Stewed Tomatoes (do not drain)
  • 2 Cans of Whole Kernel Corn (do not drain)
  • 2 Cans of Red Kidney Beans (do not drain)
  • 2 – 15 oz Cans of Tomato Sauce
  • 1 packet of Taco Seasoning (any flavor)

Combine the ground beef and onion in a large skillet, brown meat until no longer pink in the middle. Drain the meat and pour into pan. Add the pork and beans, stewed tomatoes, corn, kidney beans, tomato sauce and taco seasoning. Bring this taco soup recipe to a boil. Reduce heat and cook taco soup for 25 minutes. Serve with a dollop or cheese and serve with tortilla chips.

Spinach Manicotti

  • 1 Large Onion
  • 2 Large Cloves of Minced Garlic
  • 2 – 28 oz jars of Pasta Sauce
  • 1 tsp. Sugar
  • 16 oz. Ricotta Cheese
  • 8 oz. Shredded Mozzarella Cheese
  • 2 Large Eggs
  • 1 Cup Shredded Parmasan Cheese
  • 10 oz Bag or Box of Chopped Spinach
  • 8 oz. Uncooked Manicotti
  • 8 oz. Shredded Mozzarella Cheese

Preheat oven to 350 degrees

Thaw spinach and squeeze between paper towels to get all water out. Set aside. In a large skillet saute the onions and garlic. Add the pasta sauce and sugar. Stir to blend. Bring sauce mixture to a boil. Reduce heat, cover and simmer while preparing filling. In a large bowl combine the ricotta cheese, first amount of mozzarella cheese, slightly beaten eggs, parmesan cheese and the drained spinach. Mix spinach manicotti filling well. Pour 1 cup of the tomato sauce into the bottom of an un greased casserole dish. Stuff the uncooked manicotti with the cheese spinach filling. Layer stuffed manicotti into pan and cover with remaining sauce. Cover with foil.
Bake stuffed spinach manicotti for 45 minutes. Remove foil. Top manicotti with remaining cheese and bake an additional 15 minutes. Let stand 10 minutes before serving. Easy spinach manicotti can be prepared the day before and stored in the refrigerator over night. Remove from refrigerator 1/2 hour before baking.

Serves: 6 – 8

Creamy and Cheesy Carrots

  • 4 Cups of Sliced Carrots
  • 1 Large Onion
  • 1 Tbsp. Butter
  • 1 Can of Cream of Celery Soup
  • 1/2 tsp. Salt
  • 1/4 tsp. Black Pepper
  • 1/3 Cup Shredded Cheddar Cheese
  • 1 1/4 Cups Ritz Cracker Crumbs
  • 2 Tbsp. Melted Butter

Preheat oven to 350 degrees

Cook carrots until crisp tender. Layer carrots into a 2-quart casserole dish. Heat first amount of butter in a skillet over medium heat. Cook onions in butter until tender. Add undiluted soup, salt, pepper and cheese. Mix well and pour creamy cheesy part over the top of carrots. Mix cracker crumbs with melted butter. Sprinkle buttered crumbs on top of casserole. Bake creamy cheesy carrots for 30 minutes. Serves 6-8.

Apple Puff Pancakes

  • 2 Tbsp Butter
  • 4 Eggs
  • 1 Cup Milk
  • 1 tsp vanilla
  • 2/3 Cup Flour
  • 2 Tbsp Sugar
  • 1/4 tsp Cinnamon
  • 2 medium apples peeled, cored and thinly sliced
  • icing sugar for dusting
  • maple syrup
  1. Preheat the oven to 425 degrees F
  2. Place the butter in a 10-inch deep dish pie plate or a 9-inch square baking dish.
  3. In a medium sized mixing bowl, beat together the eggs, milk and vanilla with an electric mixer until well mixed and foamy. In a small bowl, stir together the flour, sugar and cinnamon. Add to the egg mixture and beat just until smooth.
  4. Place the pie plate or baking dish into the oven and let heat until the butter is melted and hot. Remove from the oven and holding the dish carefully with oven mitts, swirl gently to coat the entire surface with butter. Quickly arrange the apple slices evenly on the bottom of the dish and pour in the batter.
  5. Place in the oven and bake 30 to 35 minutes or until puffed and lightly browned. Dust with icing sugar before cutting into wedges or squares. Serve with a drizzle of maple syrup if you like.

Creamy Stuffed Chicken Roll Ups

  • 4 small boneless skinless chicken breast halves (1 lb.)
  • 4 oz.  (1/2 of 8-oz. pkg.) softened cream cheese
  • 3 green onions, thinly sliced
  • 1 Tbsp.  chopped fresh parsley
  • 1 clove of minced garlic
  • 1/3 cup  Barbecue Sauce (any flavor)
  • 3 Tbsp. apricot or peach preserves
  • 1/4 tsp.  hot pepper sauce (optional)
  • 4 slices of cooked chopped bacon 

HEAT oven to 375ºF.

POUND chicken to 1/4-inch thickness; place, top-sides down, on work surface. Mix cream cheese, onions, parsley and garlic; spread down centers of chicken breasts. Roll up, starting at one short end of each. Place, seam-sides down, in single layer in shallow pan.

MIX barbecue sauce, preserves and (optional) hot pepper sauce ; brush 1/4 cup evenly onto chicken.

BAKE 35 min. or until chicken is done (165ºF), brushing with remaining barbecue sauce mixture the last 5 min. Top with bacon.

Vegetable Pizza

  • 1 tube of crescent rolls
  • 1 pouch of (dry) Hidden Valley Ranch salad dressing
  • 1/2 c. mayonnaise
  • 8 oz. + 3 oz. cream cheese, softened
  • Vegetables -your choice such as: (Carrots, Celery, Mushrooms, Green peppers, Black olives, Cauliflower & Broccoli)
  • Shredded Cheese (your choice)
Arrange the crescent rolls on a pizza pan and bake 15 to 18 minutes at 350 degrees. Cool the crust. Mix together cream cheese, Hidden Valley dressing and mayonnaise. Spread on crust. Cut vegetables and add the  cheese to cover the crust. Cut and serve.

Roasted Cauliflower & Garlic

  • 1 Large Cauliflower washed & cut into bite size pieces (still wet)
  • 15-17 Garlic Cloves peeled & lightly crushed
  • 1-2 tsp. minced fresh rosemary
  • 1 tsp. salt
  • 1/4 – 1/2 tsp. black pepper
  • 1/4 cup olive oil (may need to add more to drizzle/taste)
  1. Mix oil, rosemary, salt, pepper and garlic together.
  2. Toss in the cauliflower and place in a large casserole dish in one layer.
  3. Bake at 450 degrees for 20 minutes and toss up the cauliflower and bake an additional 10 minutes.

Guinness Brownies

  • 4 eggs
  • 3/4 Cup sugar
  • 8 oz. bittersweet chocolate (chopped so it melts better)
  • 4 oz. white chocolate (chopped so it melts better)
  • 6 Tbsp. unsalted butter
  • 3/4 Cups all-purpose flour
  • 3/4 Cup baking cocoa
  • 1 1/4 Cups Guinness stout
  • Powdered sugar for dusting

Preheat the oven to 375° 

 Butter an 8-inch-square pan. Mix eggs and sugar. Beat until light and fluffy. In a medium saucepan over medium heat, melt the bittersweet chocolate, white chocolate and butter, stirring until smooth. Remove from heat and beat into the egg mixture. Slowly add the flour and cocoa together and beat into the chocolate mixture. Whisk in the Guinness. Pour into the baking pan and bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out almost clean.

Remove from the oven and let cool on a wire rack. To serve the brownies dust with powdered sugar.
